Magnificent Monday For Cooking
This Is Apple Season, Lots of goodies To make












Apple Walnut Bundt Cake
Ingredients:
2 cups peeled, diced apples
2 Tbsp. sugar
1 tsp. cinnamon
3 cups flour
1 Tbsp. baking powder
1/4 tsp. salt
2 cups sugar
1 cup safflower oil
1/4 cup apple juice
2 tsp. vanilla
4 eggs
1-1/2 cups chopped walnuts
Preparation:
Preheat oven to 350 degrees F. Grease and flour a Bundt pan and set aside. In a medium bowl, combine the diced apples, 2 Tbsp. sugar and 1 tsp. cinnamon; set aside. Sift together flour, baking powder, and salt.
In a large bowl, combine 2 cups white sugar, oil, apple juice, vanilla, and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts and apple mixture.
Pour batter into prepared pan. Bake at 350 degrees F for 55 to 60 minutes, or until cake is firm, well browned, and begins to pull away from pan edges. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with confectioners' sugar. Serves 8-10 


Always pray over your food, God will richly bless you in all you cook, trust me I have cooked for an army, and I am cooking for two now, big difference, but with practice you will be a supreme cook, and will have such wonderful compliments with what ever you may set your table with. Enjoy.

  2. Oh me how blessed you are Donna, yes it is a wonderful recipe one that every where I have taken it they love it. Enjoy your walnuts, wonderful tree to have, we had pecan tree in Jacksonville, but no fruit here, planted many but most shriveled and died, one apple left, but not doing well.   3. I have a front yard that is full of black walnuts that have ruined this year simply because I didn't know what to do with them. I found a website that explained exactly how to care for them and get the little goodies of meat out of the hulls. I will be saving them next year to get the goodies out of them!

    Barbara, this cake sounds delicious! It reminds me of one my mamaw Hunt used to make, that is a wonderful memory. She's been gone 25 and 1/2 years now. I will make this cake soon also. :) Would you happen to have a carrot cake that doesn't have raisins or pineapple in it? Mamaw Hunt used to make me one for my birthday every year. Neither my mom nor my aunt have the recipe because their house burned and the recipe was in the house. Oh, the cake had a cream cheese frosting. Thank you for your time and help!
